I missed what your purpose is. If gaming you are 4X the sweet spot for RAM and not sure a 670 can drive 3x monitors at ultra settings. If photo/video editing or the like I think it looks pretty good.

PSU is gross overkill unless it's just a good deal or you plan on tri-SLI down the road.

I will be doing gaming, but at the same time I will be running an MC server. I do plan for dual/ tri sli down the road. I think I should be able to handle a good many games as the 670 I am getting is the EVGA FTW+ 4GB edition. The card is running at close to 680 speeds. I thought the extra Vram should help but I digress.

Do you think I would be better off with 2/3 lower cards gtx 660 ti or 2 lower end 670's
I want to stay around the price I'm at now.

I always lean toward the fastest single card you can afford, at least initially. SLI is getting less and less painful but still has issues compared to just a single card. I keep it simple, since I'm stupid.

I feel like with all 4gb's of beefy vram, my card should carry well on 2 or 3 monitors. It's clocked higher than their superclocked version, and should I go i5 3570k or 2500k

Remember I do plan to use my ram for an mc server, as well as gaming, basically I'm going to be multitasking/gaming.
