I have a pair of Nokia 6190 GSM phones. I removed the sim cards when I
upgraded to new phones. Is there anything I can do with these phones - like
modify them to communicate directly? Are there any sites that describe
using old GSM phones in electronics projects?
Also, if I wanted to buy sim cards for the old phones (as backups) do I have
to pay for a full tmobile subscription cost?

No. Most dealers will sell you a SIM card for about $30.
What carrier are they on?
You can always donate them to an organization that uses old phones for
911 access for the elderly and other at-risk people.
Or you can save one of them for use as a spare phone if you have to
send one of your new ones in for repair/replacement.
