RAM: Gskill Ripjaws X 2x4GB 1866 CL9
HDD: WD Caviar Black 1TB
SSD: Crucial M4 128GB
PSU: Corsair HX750
Case: TT Chaser MK-I

What video card and monitor(s) would go well with this set-up? This will be used for gaming, video editing, and home theater. Will it be advisable to have 3 monitors? And should I have SLI/Crossfire?

Sidenote: Video card preference is nVidia.
