Budget game build Question

So I'm building another computer and I can't decide what I'm going to do. I just built the following system for my wife and I'm thinking about doing the same with some minor tweaks.

I'm thinking about building a clone system based on this MB-CPU combo for myself with an $800 budget ( I already have the power supply, case and HD). My question is, I don't plan to ever overclock it so can I skimp on the MB?

I'm thinking about doing an AMD build but do I need to Overclock it to get the max out of it? I k now if I go AMD, go cheap on a non-OC featured MB I can save even more. I can OC, I just prefer not to.

The reason I'm asking is any money I save on the CPU-MB is money I can spend on a better video card.
