The best graphic card for video/photo editing?

I am building a new system. I will mostly use it for video editing (Canon 7D camera) and photo editing. Sometimes I have to do the rendering of the video and the photo editing at the same time. Here is my system that I think to build:

1. Asus P9X79 WS
2. Intel Core I7-3930K
3. AMD Radeon HD 7970 or GeForce GTX 680 PCIE SC+ or NVIDIA Quadro 4000 GPU 2GB 256-Bit GDDR5

Any suggestions on which card should i chose? Should I have 2 or 1 card?

680 will do well vs the quadro 4000 and the 680 will game better.

Sadly the NVIDIA Quadro 4000 is old, I mean really its old. I would stick with the gtx 680 it will be faster. We use gtx 680's for cad at work I know its not the same but we see better performance.

If you can afford it I would highly reccomend getting 2, but I know allot of programs will not support dual cards.
