One stick of 256MB is faster than 2 sticks of 128MB.
Here are two reasons. First the DIMMs get farther and farther from the MCH (Memory Controler Hub) and in essence from the CPU. So the longer the distance the longer it takes to get the same instructions done if you use the second DIMM.
Also if you use more than one set of memory, as with the last problem, there can be conflicts with addressing and thus make it take longer. Now addressing problems will happen even on the same stick of memory but if the issue on two sticks there are longer data paths to follow thus making your lag time longer.
