Okay, so i've been posting around the forums during this build and have received a tremendous amount of help from everyone and i've decided that i'm going to upgrade my 560ti to either a 660ti in SLI or a 7950 in x-fire.
Right now i'm curious if the nvidia or amd will perform better in sli/xfire or if one card would perform better than the other? I'm looking to stay in the around $300 a card range and if I can i will stick with nvidia but if AMD is better I will go with them
-It will be a single 1920/1080 monitor
-650watt bronze rated PSU
-I will be overclocking the cards and my 3570k (not enough power on my 650watt maybe??)
Thanks again to everyone for all of their help so far and anymore help you can provide!
Cheers!

If you are going to Cross/SLI you must get a better PSU .. anyways it would be much better if you crossfire 7950s .. the 3Gb VRAM in each of them going to be sweet and don't forget the 384-bit bus ;)

I really think an OCed 7950 is all you will really need a 1080p. You will be approaching a 7970.
What brand PSU??

Here is Guru3D's power supply recommendation:

Radeon HD 7950 - On your average system the card requires you to have a 500~550 Watt power supply unit.
Radeon HD 7950 Crossfire x2 - On your average system the cards require you to have a 700 Watt power supply unit as minimum.
Radeon HD 7950 Crossfire x3 - On your average system the cards require you to have a 850~900 Watt power supply unit as minimum.

If you are going to overclock GPU or processor, then we do recommend you purchase something with some more stamina. Source: http://www.guru3d.com/articles_pages/radeon_hd_7950_cro...
