Some advice on GPU and HDD/SSD to buy

Hi there, I've finally started upgrading my pc.

Here's my rig

Asus Sabertooth 990fx
AMD Phenom II X4 965 BE 3.68GHz Rev. C3
Crucial Ballistix Elite CL8 16GB @ 1600MHz
Sparkle GeForce GTX 285 2GB
WD Scorpio Black 750GB 2.5"

As for the CPU, I've already made up my mind. Since I have my new mobo, I'll go for the FX 8350.

But I really don't know which GPU to go for. I could buy - for pretty much the same money - 2 HD7970 (Sapphire's OC version) and CrossFire them (3GB VRAM), 1 HD7990(6GB VRAM) or 1 Nvidia GTX 680 (those CUDA cores are very tempting :D, but only 2GB VRAM) - around 700-750 euros. What would you suggest? I do game, but I also do some 3D animation (1 point for nVidia here). I'm taking a course, so...

Maybe I should save up a little more money and go for the GTX 690.........

As for the HDD/SSD, I have no idea what to buy. I was thinking about 1 Samsung 830 128GB for the OS (Windows 8) and another for games and heavy applications. But do I really need 2 of them? Should I buy one 256GB SSD (or maybe 2x 128GB SSDs and raid-0 them)? Then buy a 1TB HD and use it as an archive. (I have an external HD connected to my router, so I regularly backup).

So, please, tell me which one is best and why.
