So I am upgrading my computer from a gtx 690 and an i5 2500k to a

2x gtx 680 4gb (evga or msi, might go with msi because of better airflow)

i7 3770k

I am also planning to add 3 monitors and put them in portrait mode. I am curious to know how well this setup would preform.

I am very picky when it comes to FPS rates as I like seeing everything running nice and smooth ^-^

This is the future specs:

Mobo: Asus Maximus V Formula
CPU: i7 3770k
GPU: 2x Gtx 680's 4gb
PSU: 1200W Corsair
Ram: 8gb Vengence

The games I usually play are:

World of Warcraft
Counter Strike Global Offensive
Battlefield 3

I don't mind running the games on the HIGHEST settings. I am pretty lenient. As long as I can play with a fps higher than 60 :))

Thanks a lot for the answers everyone

None of those games listed will get any benefit from an i7 , the top i5 would do the same job
and 4gb cards are overkill for all of those games
Even BF3 in triple monitor mode only uses around 2gb of graphics memory (set on ultra settings)
So your 2 GTX 680's are basically going to run the same as your GTX690 short of running cooler

I concur you won't see much of any improvement. Save your bucks and spend it all on your triple monitor setup, a lot of enthusiast gamers don't spend nearly enough money on their displays, the one thing they will probably keep the same for 2 to 4 upgrades.
