Do I really need Crossfire or SLI?

I am NOT building a gaming machine.
However, I do video editing (Vegas Pro 64 bit) with 1080p source video and rendering.
It seems to me these cards are made to benefit games. Do I really need to get cards with either one of these features?
What I DO need is dual DVI out. I am currently running my system with 4 monitors and I intend to build a new Windows 8 machine doing the same thing.
So, best bang for the buck would be...?
