I am making my final decisions with the components I want in the new gaming set up I'm building. I was just curious as to what would be more beneficial to have: the ivy bridge 3770k + asus hd 7870 graphics card or the ivy bridge 3570k + gtx 670 graphics card.

i7 has no benefit in games, it performs similar with i5 because no game utilize hyperthreading

3570k + GTX670 graphics card no question. That will yield the most performance of the two you listed.
However you may also want to consider the HD7970 as it is roughly the same price. You will get an extra GB of ram and has a higher over clock ceiling in many cases.
