To much information / help with direction

Will try to be short and sweet - I am a video edtior SD / HD / assorted formats - I do not game, currently have moved into HD only and my computer seems a bit "chunky" throughout its process's - Programs used are Vegas 12, After Effects -

I am a plug and play type, I don't understand most of the tech / spec / benchmark talk, I like it to work out of the box, however I am considering trying to overclock y current machine -

Here is my question - Do I -
1) try to squeeze everything out of the current system, as I am sure nothing is dialed in for my needs
2) build a new machine utilizing parts from the current

Option 1) I have no idea where or how to dail ram in, overclock anything, check system and optimize for my tasks
Option 2) Upgrade processor / mobo / ram - use the rest of the old - with this comes i7 3770 or i7 3930

Budget is always looked at, however this s my job so I can justify the 3930 however if not really needed would rather not

24 Gig RAM
Nvida GeForce GTX 285
Internal Sata - 500 Gig OS
Internal Sata - 2 TB Capture
Internal Sata - 2 TB Scratch / render / Temp storage
Drobo External - 8 TB Storage
Triple - Dell 24" Monitors - 1920 x 1080 res / two for work / third for online while I work if needed
