Any way of deleting that video file of the two hands shaking and the bell
tones when it boots up?
Are there any other options to have it do or say or put my own little video
file when the phone is turning on?

Settings -> Phone Settings -> Startup Message
Or, instead of startup message, turn Startup Tone to Off.
