I have an HD 7850 video card. From what I've read in the box it came with, I have to plug in two 6 pin connectors from the power supply into the card. The only thing is that my card only has 1 port so there is no other place to put the other connector. Is it ok to just have 1 connector hooked up or is something wrong with the card? It just seems a bit odd that the manual says that I need to have 2 PCIE connectors put in.

The 7850 only requires one 6 pin connector. There is nothing wrong with the card, I don't know what's wrong with that manual.

The box is not a manual. Even the manuals for such components are generic and do not exactly define how the components should be connected. Look inside the box and examine the component. Graphics cards are not NASA gadgets. They are simple to connect.
