Also im not to fond of Over clocking processors so i think the processor Cpu i have Picked is Hopefully adequate :p

1. your pairing a overclocking motherbopard with a non overclockable cpu.

2. no need for 16gb of ram unless youre using photoshop or programming.

3. why the 2 hdd's? get a 2tb seagate.

4. dont need the cooler. the stock one is fine.

other then that the gpu and psu look good
 
This is a very decent build but you should get a k CPU for overclocking since you went with Z77 board. OCing is much easy, just simple clicks and you're done, it also boosts up the performance and avoid any bottlenecks.

Also change the CPU cooler for CM Hyper 212 EVO.

Iv'e never tryed Ocing a Processor and this is a really silly question to ask but if i got the i5-3570k how much should you Overclock it to? im always nervous of breaking it by setting it to High..

overclocking can be advanced and if done wrong can harm your system...do research first from other overclockers and step by step instructions and what program you should use and get familiar with hte bios.
 

You can just read the sticky on the overclocking section on how to OC Ivy Bridge CPUs, you can read about OCing in general.
With the 3570K and Hyper 212 EVO, you're up to 4.3-4.5 GHz without any cooling issues.
