Graphics Card - Modded Skyrim

BUDGET RANGE:
I live in EU, so whatever posted here has to be converted from € to $. I wish to spend no more than 300€ so by Google I’m around 392.04 $.

USAGE FROM MOST TO LEAST IMPORTANT:
I like playing Skyrim. I may try a few new games once in a while, but nothing too demanding such as Crysis 2.
Last game I played since Skyrim came out is Dishonored.
I also enjoy watching FullHD movies.
Concerning Skyrim, I wish to play the game at Ultra Settings:
Aspect Ratio 16:9 Widescreen
Resolution 1920x1080
SSAA 8 Samples
AF 16 Samples
Ambient Occlusion: Enabled - Quality
In addition, I like playing a heavily modded Skyrim with some .ini tweaks as well, like uGridsToLoad set to 7 or 9.
My current GTX 560Ti has been able to deliver most of the above but with low FPS. I had to cut down on SSAA (4 Samples), no Ambient Occlusion, Shadows High instead of Ultra and of course the lowest resolution possible textures.

CURRENT GPU AND POWER SUPPLY:
My current GPU is Gainward GeForce GTX 560 Ti 1024MB "Golden Sample", which has been able to do everything for me, except creating the ultimate Skyrim experience.
My PSU is Xilence Gaming Series SPS-XP700.

Case: Cooler Master Elite 330
MB: Gigabyte P67A-D3-B3
CPU: Intel Core i7 2600 @ 3.4GHz
RAM: 6GB of Kingston KHX1333C9D3B1/2G 2GB HYPERX DDR3 BLU
HDD: Seagate ST31000524AS 1TB BARRACUDA 7200.12 SATA3
No overclocks.

PARTS PREFERENCES:
To tell the truth I have never used an ATI card in the past so I’m looking forward to buying a NVIDIA. But I’m open to ATI suggestions as well.

OVERCLOCKING:
No.

SLI OR CROSSFIRE:
Not for now.

MONITOR RESOLUTION:
My monitor is LG E2441V-BN [1920x1080].

Please ask me everything else you need to know to in order to make your suggestions.

GTX 670s start from 365 euros in my country so it doesn't seem possible for me to buy one of those.
Searching for 7950's I found these ones:
1. Sapphire Radeon HD7950 3GB
2. AMD Radeon HD7950 3GB
Both of them are below 300 euros and are sold by trusted websites.
So, which one would you suggest?

BigMack70 You are right about uGridsToLoad, but it's just too tempting to have all that eye candy...

I found this one:
Asus GeForce GTX660 Ti 2GB DirectCU II for 303 euros.
I also found these AMDs:
1. XFX Radeon HD 7950 Double Dissipation Edition 3GB
2. Gigabyte Radeon HD7950 3GB
Both of them around 300 euros.
