Help! Windows 7 does not work with new installs

Hello. I'm hoping you guys can help me out with this.

I just bought everything to build a new computer.
2x4Gb 1866Mhz G.Skill Sniper X RAM
ASRock AA970 Motherboard
AMD FX 4170 Zambezi 4.2 GHz Processor
128GB OCZ SSD
300Gb Western Digital Caviar Blue HDD
Gigabyte GTX 660
Sea Sonic 650W PSU

I originally installed Windows 7 64 bit on the SSD. After installing drivers and things, everything was ok.
I started installing and downloading large files (Starcraft 2, game demos, etc) to it and it would freeze up the ENTIRE computer at times while downloading. Same thing with browser downloads.
Decided to reinstall Windows, and realized I hadn't enabled AHCI. I did this, and now i get part way through "Expanding Windows files ..." during the installation, and then it throws an error about files not being found and to restart installation...

I'm booting from a Windows 7 Ultimate 64-bit disk.

I've tried disconnecting the HDD from SATA so only the SSD is seen. No luck.
I'm currently trying to install to the HDD alone, without the SSD plugged in...

This is getting really aggravating, does anyone have any ideas?
