I installed Windows 8 Upgrade recently, I cloned my Win 7 drive and did a Clean install of Windows 8 by deleting all partitions previously created by Windows 7. Everything works fine however, when I look at the partitions with EasUS Partition Master, it shows so many partitions, any ideas why Windows 8 created so many?

one reason you have so many partitions is you are using GPT.
Windows8 on GPT creates 3 partitions (2 NTFS, 1 FAT32)
Is GPT a default setting for Windows 8? Because I simply deleted all the partitions and had the Windows installer automatically setup the hard drive. Also I have a UEFI bios if that makes a difference?
