Building dream system - need expert opinions

Hello all, I am in the process of building my dream system and have most the components figured out - save for the graphics cards. I have been doing tremendous research and here is my question: Which would be better - running two EVGA 690's (thus having quad SLI) or multiple 680 Classified's? I undertsand that the 690 is limited in that it only has 2GB per GPU, as well as some other inherent limitations. If I ran 3 or even 4 680 Classifieds I would end up with greater RAM and the same amount of GPU's correct? My system is mostly built and here are the specs if it matters for the answer - i7 3960, Asus Rampage IV Extreme board, Thermaltake Level 10 GT case, Corsair AX1200i power supply, Corsair H100i (Thats whats together so far along with optical drives) So, first, which is the best way to go graphic card wise - money no option? Two 690's, 3 way SLI 680 classifieds, or quad sli 680 Classified's? (If I can do quad - I am not sure they would all fit on my board but I am pretty sure 3 can) And, if going the multiple 680 route, will I have enough power with that 1200w supply while also running multiple hard drives, fans, etc..

I would truly appreciate any and all help! I am a disabled vet and gaming is what I do now that I lost my legs and I have saved to build the ultimate machine - and want to make sure I get it right. Thank you all so much. OORAH!
