Well,

These days its nice to have a 1920x1080 (1080p) monitor. It allows for more content to be displayed in the same space. It also means more eye candy when gaming, and of course requires more GPU power to run (although your hd7870 will have no problem with 1080p).

Do you really need a 1080p monitor? Well thats up to you, are you fine with the one you have now? If you are fine and happy then stick with it. If you want higher resolution in games, then get a 1080p monitor.
You could run two monitors at once, your card supports it. I would not game on two monitors at once, but you could game on the 1080p monitor, and have a web browser or temp monitoring program on your other monitor while you game.

Hope this helps solve your dilemma :p

Your going to get 57600 more pixels. Not very much, but noticeable. You could get a 1080p monitor if you want to watch blu-ray movies in all of their glory. A 1080p monitor would give you a noticeable amount of additional screen real-estate which is good for gaming.
It's not imperative to have a 1080p monitor, but it gives you the ability to see more at a given moment.

It's actually 633,600 more pixels.

1600 x 900 = 1,440,000
1920 x 1080 = 2,073,600

That's basically a 44% increase in pixel count.

Basically the higher the resolution, the more details there can be on the screen. However, it comes with a performance penalty. What's the "penalty"? Roughly 44% drop in frames per second. In actually it should be a little less than 44% though and it also depends on the game.
