1 good card or 2 ok cards SLI/Crossfire? I have about a $500

Go for a single card the GTX 670 or 7970

I prefer mostly 1gpu as 2 gpu means you have to take care of cooling inside case + heating problems + sluttering + some games doesnot like multigpu.multi gpu are fine but you need to take care of it

The 7970 most likely will OC better and it will murder the 670 at high resolution (and has way more compute power), the 670 gives you CUDA , PhysX, TXAA, FXAA, ADap. Vsync etc and lower power draw.
