Am I correct in my assumption that if I buy a HD receiver before I buy a HD
TV, that the new receiver and my old TV will work okay together?

I have an HD Tivo hooked up to an old Sony set. You have to set the front
panel to 480i. It will downcovert the signal and place black bars on the top
and bottom of the picture for most channels. For local DTV channels, it will
make a black border around the whole screen. The net effect is that your
screen shrinks a little bit. It's still very usable. My HD Tivo has an
s-video output, so I used that on the television's input. The nice thing is
that I now get local digitial OTA broadcasts.

I have a Samsung SIR-T151 HD receiver that I no longer use.
One nice feature it has is that the 480i outputs (red + white + yellow
+ S-Video) were always active. That signal could be sent to a VCR
or a non-HD TV. It would be anamorphic (tall and skinny) when a
wide-screen program was being received. It was normal looking when
receiving an SD program.
