<A HREF="http://www.fokus.gmd.de/research/cc/glone/employees/joerg.schilling/private/cdrecord.html" target="_new">cdrecord</A> is the usual way to burn cd's under linux, and it is cron-able. Plextor is fairly well supported, so your burner should be ok. There are some other related projects on <A HREF="http://www.freshmeat.net" target="_new">Freshmeat</A>, too.

Your old (Windows) Iomega software won't work under Linux directly, but you can try running it under <A HREF="http://www.winehq.com" target="_new">WINE</A>. Nero 5.5 seems to <A HREF="http://appdb.codeweavers.com/appview.php?appId=152&versionId=286" target="_new">work</A>.
