My location is longitude 80 degrees (Miami). If I were to hold a compass
under the LNB and noticed where dead south was, would that be my starting
point (for aiming dish) from 80d longitude?

Therefore: your line of longitude is dead south, align my LNB up with the "S"
on the compass and I should be pointing at 80d.

At 80 degrees (Miami) longitude, stand on the south side of the dish
at least 10 feet (more is better) from the dish (and with no ferromagnetic
objects nearby), then move your position in an arc from the dish, until the
compass reads north/south (still from the south side of the dish). At that
point, you will be magnetic south of your dish (not to be confused with your
longitude of 80 degrees). Then mark that location with a stick or such; now
stand behind the dish and point the dish/lnbf towards the stick. Your dish
will now be pointing magnetic south. You must use the appropriate dish
pointing calculator which refers to magnetic azimuth, for your
latitude/longitude and the satellite you wish to capture.

You can try this dish pointing calculator, just be sure to use a minus sign
where "deg E" is specified, to get degrees west.
