Looking at putting in a whole house sound system that has button pads that
send stored infrared signals
to a central component rack.

Which of the FTA receivers, such as PANSAT 2500 or Fortec Star work best for
selecting
favorite stored audio channels using infrared remotes?

There will not a TV set to view menu screens in normal daily use.

LOL, that is the weak point of the Pansats and Fortecs.
If you put the emitter close it will be fine though.
You can set only the music channels you want in the guide and ch+ / -
will scroll through them just right.
