If I'm installing a DVD and a CD-RW, which one should be the master/slave? Or should one be connected as slave to the hard drive?

It really depends on what you would be doing with your computer/drives.
The master device gets priority over the slave device - just keep that in mind when you're figuring it out.
Only one device from a channel can be accessed at any moment.

If the CD-RW and the DVD-ROM have simillar speeds and the CD-RW supports burnproof then you can install CD-RW as secondary master and the DVD-ROM as secondary slave.
The other option is Primary slave the DVD-ROM, this helps a lot if you copy CDs a lot (on the fly!) as it is a lot faster...and safer.
