Well, here's a thread dedicated to BBQ & the Manly art of cooking on anything!! Recipes can be posted & shared. Any good things off the grill you've had lately??
I'll start out with my Onion Flower, Ummm, so good with steak, or anything really.
Onion Flower
1. Vialdilia onion ( any Sweet onion will do as well)
2. 2 turkey skewers ( the ones that are about 6" long used for sewing in the stuffing)
Clean onion. Stick the skewers through the very bottom of the onion, in a cross, 180 deg.s apart. Now cut straight down from the top of the onion to the skewers In a pie fashion, but in-between the skewers. . Do it in 4ths or 8ths. Now spread the leaves apart as much as you can. Put it on the grill & when the outer leaves are just getting blackened, it's done. I spread the leaves some as it cooks. It should be sweet & crunchy when it's done.
If I'm doing one to have with a steak, I put it on as quick as I start the grill, & let it cook while the grill is heating up for the steak. I do it this way because I cook my steak rare, about 5 minutes on a side, is all. The onion will be finished when the steak is done, this way.
If I've marinated the the meat, I baste the onion with the marinade while it's coking.
You can't go wrong with these. I have to do 3 or 4 of them every Sun. when the Family comes over.

I read your post about your grills JPJef. Pretty neat. I've never had a natural gas grill. I've always had propane though. I grill all year long with my propane also. Gets around zero & it just takes a little more time to get done, is all.
I have a rotisserie on my grill that I use a whole lot. It will spin at least a 25 lb. turkey. It has a counter weight that you adjust to make it turn smoothly while it's cooking. I like to turn things & cook them slow, with a lot of smoke.
My best grill is a fire cooker, at least that's what I call it. Don't know the name of it or if they're even built now. It has a tripod that is about 4 1/2 feet tall with a pulley at the top. The grill is hung off of 4 chains that go up through the middle of the tripod to an adjuster that goes on a leg. You set it up over a hardwood fire that you've let burn down to embers. You raise & lower the grill with the chain to control the heat. I've never had any better than cooked this way.

you cant beat my chicken breast seasoning. take a boneless chicken breast about the size of your palm roughly. about a tsp salt, granulated garlic, granulated onion and about 2 tsp italian seasoning. you can do both sides if you want but i usually just do one side. if you have the time, marinade in one bottle of good beer, 3 tsp brown sugar and lots of finely choped cilantro. goes good with fried potatoes.

That sounds good, except for the cilantro. I can't stand the smell of it even. I was real picky when I was in Mexico. It would be good without it, I would think.

BBQ Sliced potato's
Slice 4 or 5 Tators up into reasonably thin slices.
Take large sheet of tinfoil about 20 inches long and cover with Margarine.
Place potato slices in two rows side by side about 12 inches for each row let the slices slightly overlap each other.
I season with black pepper and some garlic salt, throw a few green spices in as sprinkles like chives.
Wrap the foil so you get a 12 inch long deal folded to meat in the middle and fold the ends over.
Place right onto BBQ main rack and cook. Wait until you hear some good sizzling going on and perhaps some leaking yellow margarine juice then carefully open the top to peek in and see if your potato slices are browning up nicely.
I normally make 2 foil packs of potato's up at the same time. Serve with a few steaks.
Cook the buds first then place in top rack of BBQ to keep hot when you get the steaks cooked.
Easy as it sounds but the potato's are great!! Or my wife simply says they are so I cook and she doesn't

The best way to make ribs is to put them in a crock pot for a few hourse before putting them on the BBQ. After they are cooked in the crock pot, take them out and marinate them in sauce for a good while. I use Sweet Baby Ray's BBQ sauce. It's gooood. Then, cook 'em on the grill and enjoy them as the meat just falls right off the bone. Yum!

My buddy made some "Atomic Burgers" at one of my parties... Put about everything hot into it he could find. They were AMAZING!!! Unfortunately, we don't have the receipe, it was just throw everything into a bowl!
Here's a great manly receipe: Open a can of baked beans, set on grill or on rock in fire pit. Wait till it starts bubbling. Remove from heat.
Gotta love those campfire beans!!!
I just like cooking burgers with lots of spices in them, but you need the Lawrey's seasoned salt! YUM!!!

for burgers, the best thing you can do is mix the beef up with little bit of salt, lots of garlic powder, lots of onion powder and about an 1/8th cup of worcheshire sauce. put it on the bbq and put a GENEROUS layer of pepper on top. let it cook a long time on the first side so the juices help the pepper soak in real good. obviously you need low heat. dont forget to toast the buns and melt the cheese on the burgers.

Another good Chicken Recipe:
Ingredients:
chicken breasts (as many as you want.)
Lowry's seasonings
Spanish Rice
Pineapple
Teriyaki sauce.
Take the breast and knead the seasoning into the chicken very thoroughly. (fire up the grill of course) Place chicken on the grill. While cooking chicken the grill. Cook Spanish Rice on the stove. The rice will be done before the chicken is so make sure to time it right for perfectly heated meal. After rice and chicken have been cooked to your liking, spread the rice one a plate (about a half inch thick is what i usually do.) Place one Chicken breast(centered) on top of the Rice. Place the sliced pineapples on the grill just long enough the put char marks on both sides (this actually caramelizes the natural sugars inside the pineapple) place two on top of each breast(centered). now pour the teriyaki sauce over the pineapples and chicken and a little on the rice.
and there you have it,
Cam's famous teriyaki chicken.

Here's one I do up in the broiler and am waiting to try on the BBQ as soon as I get one again:
Ingredients
1 large tomato
brick of mozzarella cheese
butter
garlic powder
vegetable seasoning
take a knife and cut out the top and centre of the tomato. You basically want a tomato bowl type thing. Put in a dab of butter, and sprinkle on some garlic and vegetable seasoning. Cut a couple of small blocks from the cheese and jam them in as best you can. Put some more seasoning and garlic on top. Cook until cheese is melted.
I do it up in the broiler so as to brown the cheese on top slightly. It's really good if you use mozzarella and then top it off with just a little bit of feta as well. You can also keep a little cap of tomato skin and meat and attempt to close up the tomato again, then you'll be able to flip it some and cook it that way as well.

I do in fact add onions to mine as well I forgot to add that in the post. I have at age 41 from time to time had some minor stomach problems and keep a jar of Rolaids handy and they work so it's not like I have a bad thing going on. My Doc says I am cool and he has been my Doctor since I was 7 years old.

You can only do real ribs is on the grill!! Crock Pot or par boil, is a crutch!!! Real ribs are an art that you can't rush.. Slow fire, lots of smoke & oh yes, they will suck off the bone

Onions don't bother me in the least!! Along with garlic (I'm Italian) are the staples of life it self... Well, pasta is the staple, however.. I'm 3 generation form Italy, so I've adapted more to potatoes than my parents. I'm addicted to baked potatoes!!

inside out burgers on the grill...Make two thin burgers and put all your favorite toppings on one thin slice of burger don't forget the hot pepper flakes and the lea and perrins sweet onion pickles mustard (catsup or ketchup) I like both. Just make you a good garbage burger...then stick the other thin burger on top and mash the edges together. Grab your favorite brew and cook that baby up.

Hey, that description about grilling verses BBQ is a good post. I guess I hadn't thought of it the way you wrote it, but it's right on. Here in the north, grilling / BBQ is one in the same, kind of generic. Just means cooked on something other that a stove!!

Yeah, that's what I've noticed about grilling/BBQ. Southerners get more specific about a difference. But, the BBQ capital IS Memphis, TN, after all....

It would be sweet to go there. Some rib cook off comes through my brothers in Lincoln NE, that he goes to. We don't have any of that around here, that I know of. Some chili cook offs is about it.

My grandfather had a recipe for brisket that'll make ya want to slap your momma if ya try it. Dad and/or wifey has it now. May have to post that. You've usually got all day, you could cook a brisket!

I grilled some portobella mushroom slices once... Put a thin layer of butter on one side with some garlic powder and italian seasoning and threw them right on the grill... We also grilled some salmon that we caught on Lake Michigan. Took the filets, put some butter and some lemon slices on them, wrapped them in tin foil and threw them on the grill! Those were damn tasty!!!

I've got a mean recipe for garlic and butter mashed potatos. It's not a barbeque recipe, but they go nicely with barbeque foods, like steaks and barbequed corn. Boil about 7 potatos with about 6 or 7 cloves of garlic. Once they're all nice and soft, take them out and put them in a big bowl. Slice up 1/2 to 1 stick of butter, depending on how much you care about getting fat, and throw it in with about 1/2 pint of heavy cream (depending on how many potatos you have). You could use milk instead of heavy cream, again depending on how much you care about getting fat. Whip it up with an electric hand mixer while adding freshly ground pepper. The best mashed potatos you will ever eat, period, and if they aren't then you're a nazi.

Brisket sounds real good. Stuff is higher than hell right now though. Even corned beef is sky high right now. I have trouble finding a fresh brisket around here!!

A prerequested stop over at big Mommas BBQ should enliven the taste budds up , then set speed at around 90 and could be there in about 4 hrs. Here i am sittin around with nuttin to do . OK Jackass. I cooked mushrooms to go with whatever meat I had on the grill. I don't think I have ever gotten the charcoal without some sort of meat to go on the grill, even if it was just hot dogs! (MMMmmmmmm, you just can't beat a grilled hotdog!!!)
