Lets say I fancy running a RAID 1 webserver setup.

8MB or 2MB caches make any difference in this instance?

Webservers typically get hit with a lot of read transactions which will be benefitted by the biggest cache you can afford. Certainly an 8MB is better than 2MB.

Less of an issue with cache is if your server is doing a lot of streaming or FTP transfers. In any case, a dedicated SCSI or true IDE RAID like 3ware makes a big difference in Network transmission efficiency on Windows boxes.
