Anyone know how to find out what level of difficulty you're playing on? It's
just that I stopped playing the game ages ago because it got too damn hard.
Well I've just finished it and want to restart but I just can't remember
what the last difficulty level was.

Alright, someone on Gamefaqs told me:

Start out by clicking on the easiest difficulty then load a saved level,
after the levels starts press Esc to go back to the main menu and look at
the difficulty. You'll see that it's not on easiest anymore. It'll be on the
difficulty of your saved level.
