Alright, someone on Gamefaqs told me:

Start out by clicking on the easiest difficulty then load a saved level,
after the levels starts press Esc to go back to the main menu and look at
the difficulty. You'll see that it's not on easiest anymore. It'll be on the
difficulty of your saved level.
