I am thinking of getting a bluetooth headset for my Moto V3 - but would
really like one which charged off the same charger as I have with my V3. Do
any of the Motorola bluetooth headsets have this charging interface?

If the V3 uses the same charging interface as other recent Motorola phones,
then yes, the bluetooth headset will be able to use the same charger as the
phone. In fact, in the case of my V710 and hs810, the two chargers are
identical. I also have the $9.95 splitter that allows charging of both the
phone and headset at the same time.

I'm not sure - It's my first Moto!
It uses a Mini-USB connector. It uses the same port for charging and for
data transfer with a computer.

You surely did pick an expensive one for your first Motorola!
At any rate, the answer would be no, since that phone uses a USB port for
the charger.
But both of the Motorola bluetooth headsets come with their own charger,
which like I said is identical to the charger supplied with most of the
recent Motorola phones, such as the V710, T720, T730, etc.
