How many sticks?

Ive been off the hardware high for a while now. Just built a new machine based on the Leadtek board, NF2 chipset. I have three slots for memory. Two of these are currently inhabited by matching Crucial 2100 sticks. What happens if I throw in a third stick of the same? (The price is right). Am I still operating at the optimal bandwidth for this memory, how does BIOS view the third stick?

It will go slower.

The Nforce and Nforce2 only work in dual channel mode with two slots filled.
The addition of a third stick gives you more ram, but it goes back to single channel operation.

If you want more capacity and the same speed, you will have to replace both those sticks with bigger capacity ones.
