My question is, is where an easy way to record to an mp3 player or a mini disk or any other device and bring it home to my computer, transfer the files, (convert them to WAV if we need to), then burn it to CDs? CDs are easer to work with than cassettes and less money.

Yes,

Just find a portable MP3 player with a line-in. Possibilities include the Archos Jukebox Recorder 20 and the Creative Nomad IIc. There are probably other good options, look around a little bit - just don't assume all portable MP3 players have this capability, many don't. Check the feature specifications. Hook a mic up to it and record an MP3 of the service. Transfer the MP3 file to a PC. Use an MP3 to WAV decoder (a perfectly servicable one is included in Winamp 2. Then use any basic CD recording program to burn the WAV onto a disc.

Nothing too complicated, I hope.

I don't know exactly how to revive those old cassetes to CD format. But i know there is a way, but expensive.
