Dual channel DDR on nForce2 is also known as Twinbank technology which theoritically double the memory bandwidth by using two identical RAM modules. So you do need two sticks of DDR SDRAM, which as identical as possible to avoid stability issues, to fully utilise its power. The latest benchmark between nForce2 and KT400A shows that nForce2 in Dual channel DDR is absolutely more powerful. Two is better than one I say.

You never know how stupid you are until you have done something stupid enough for you to realize it.

you don't need matched pairs, but using matched pairs in the proper configuration will enable Dual Channel and give you a small performance increase.
