I am interested in recording a jazz combo outside -- yes in the
elements -- with an environment bi-aural device similar to the old
Sennheiser KundesKauft head .

I would prefer to use a powerful laptop with audigy laptop card..

But I thought prudent to ask here for opinions. Perhaps another
portable hard disk recorder would be good

24/96 Mackie or other similar ... Yes I am looking for quality but
not studio quality ... I don't mind .. in fact .. prefer city noises
and a bit of wind

I presume you mean Kunstkopf.

You mean "binaural" recording with the "kunstkopf," which I think translates
as artificial head.

If you're doing binaural recording, why do you need 24 channels? Better
to spend your money on the best 2-channel converters that you can afford.

Kunst = Art
Kopf = Head

Artificial Head would be Kuenstlichkopf, rather than just Kunstkopf

Kundeskauft translates roughly to "Customer buys"

Kunde = Customer
Kaufen = To buy/purchase

While "kunst" as a noun means art, the prefix "kunst" as in kunstkopf
or kunstlicht or whatever has the same meaning as the adjective
"artificial". "kuenstlich" is an adverb. as in "Nah, McGyver, das hast
du wieder kuenstlich gemacht!"
In German, instead of using an adjective, they often add a prefix to the
noun.
(which makes googling in german a pita, because if you're looking for a
large diafragm condensor microphone, it might be something like
"grosskapselkondensatormikrofon" or just "mikrofon".
As to when to use a prefix or an adjective, I don't know. Any native
speakers?

Either "künstlicher Kopf" or - well - "Kunstkopf".

Kondensatormikrofon sounds good, but longer words don't.
Kondensator-Mikrofon would work too.

Yes I have the laptop. Yes I think I can get a head or similarity.
Audigy cards are cheap enough

Microphones can be rented cheaply.

What 2 channel converter (A > D I presume) is recommended?

Yes I would like to record digital in quality format.Yes I could borrow
a DAT but why?? DAT is a past format now -- right?

Are there Digital microphones? .. or just Analogue? (I've never heard
of any)

No I speak non-german ... thanks for the lessons in speilling
