Because RAM runs faster in Dual, Triple, or Quad channel mode. So there is always 2, 4, 6, 8, or 12 slots.

Multi-channel memory architecture is a technology that increases the transfer speed of data between the DRAM and the memory controller by adding more channels of communication between them.

Multiple channel requires symmetrical channels so there is almost always a multiple of 2 channels.
