Anyone around here notice how much presence the drums have in the
latest Mexican polka music? It sounds so nice on the AM radio. The
kicks and snare, crisp and perfect. How do they get that sound??

Massive midrange boost and obscene amounts of compression. Get one of
those records and give it a listen on a good system. They are definitely
tuning the mastering process for AM broadcast.
