I have two Samsung 512MB PC800 RDRAM chips
I have two Hyundai 128MB PC600 RDRAM chips

I understand that if these were installed all together, they would all run at the lowest speed (PC600), right?
If this is true, which setup would actually be better
1GB running at PC800, or 1.25 running at PC600?

Yes, they would run at the lowest speed.
I would go for the 1GB@800, you have no need for the extra 256MB unless you have some very memory-hungry apps.

Running the system at PC800 speeds. The extra 256MB is not going to makeup the throughput of the faster memory bus. You will have a better ratio between the FSB and the memory bus. (3.2GB/s across your dual channels and 3.2GB/s across the FSB.)
