The difference between the regular RAM and Gold Ram is the CAS.

The regular RAM has a CAS of CL 3-4-4-8
While the gold seires has a CAS of 500Mhz CL 2.5-4-4-7* making it much better then the regular DIMMs. Typically the low the CAS number the better the RAM because it has a lower latency.

As for the dual channel RAM, you get 2 DIMMs (listed properties above) instead of 1 that are paired up and tested to work perfectly together before shipping to you for increased computer stability while running a dual channel memory configuration.

BTW, if you want somce real badass RAM, look at Corsair Memory. Lowest CAS levels i have see yet and on the best model, it has a really cool heat sink to keep your RAM cool and looking pretty if you have a side window in your tower.
