I own an Anthem AVM-20 that has balanced outputs. My Hsu subwoofer has
only RCA inputs. Does an XLR->RCA cable offer any theoretical or
practical advantage, or should I save the money and just stick with
RCA->RCA ??

No advantage at all. The whole cable run will be unbalanced, and
depending on the design of the Anthem's output, you may well end up with
a worse result by grounding one of the outputs.
