I played U6 all the way through using only the raft. I had Dupre carry it when
we were on land, thus always having a boat handy.

If you are lost at sea, and don't have the sextant and map, just pick a
direction and keep going that way until you hit land, which you will
eventually.

There weren't areas where you could go around the world (torus) and never
hit land again? What about Peering at a gem to see where you are? Did
they have those in U6?

This is wrong, IIRC. You could carry a skiff around with you all the
time and happily cross all the distances. No need for a ship.

This is different to U5, where you got damage every time you hit the
deep sea via skiff or carpet.

Yes, there were gems. But the thing is, you can always land on any
piece of land and use the orb of the moons to safety (eg lord
british).

Yes there are, but only at the map edges. An aware Avatar should be aware of
being lost at sea long before getting to the edge areas. Going diagonally would
avoid the wrap around problem.

A gem map would indeed shed some light on the current location.

The thing is I didn't have control of the skiff, I was swept out to sea.
I've tried navigating south, but the wind and tide seem to be against me.

Maybe I'm missing something, I really wasn't being too careful at the time
(just running around the world a bit).

I remember in the SNES version the bounds of the world were limited with
"another dimension", that is, the world was flat ;)

Indeed, this is how it is.. the map is bordered with Void,
although I'm pretty sure you can fly over it with the balloon,
or also through foul means if you add Quenton or a winged
gargoyle to your party.

Or replace the Void with sea ;-)

Rafts and skiffs are different things in U6. You can generally control
skiffs fairly well, but rafts mostly go with the wind. There are also
edges and corners of the map in U6, so if you get lost you can head in
one direction (if you have control of yourself) and usually find some
land.

I had found the skiff in the sewers early in the game, and had forgotten about
rafts, having never needed one.

Me too, no need for rafting when you can go skiffing.
