I have a high-end two channel system with Levinson electronics (380S
preamp, 334 poweramp)with Martin-Logan ReQuest speakers, and I'm
considering switching to SACD. Does someone make a multi-channel processor
that I could add? (along with an additional and speakers, I realize!)

You do not need a processor for SACD. What you need is a multichannel
controller. They range from the superb-but-discontinued Sony P9000ES
and up through the McIntosh and BelCanto units. Feed the SACD player
to the MCH controller and its L/R outputs to the HT bypass (or other
calibrated) input on the 380s. The other outputs should go to the new
center, surround and sub and their associated speakers.

Or just listen to the SACD in stereo. 99% of SACDs have a stereo SACD
track. The other 1% will just give you the front L/R of the surround
track or (depending on the hardware) down convert the 5.1 to stereo.

Music in 5.1 doesn't thrill me, but I have to admit that "Dark Side of
the Moon" in 5.1 was kinda nifty.

DSOT aside, 5.1 (or other MCH formats) is, imho, the best reason for
SACD. The music blossoms.
