n00b HTPC questions...

I am reasonably new to the concept of a HTPC, but am going to have a crack at it anyways, however I have a few Q's...

I usually rip my DVDs as VOB files using DVD Decriptor to play on my PC. But the files are MASSIVE. How, and using what should I encode them for storage on a HTPC?

Is this the best way of backing up all my DVDs to one drive? Or can anyone reccomend a more efficient or feature rich way of doing so?
