My boss wants me to find out a way to encrypt the data that travels over the network between the client (win7/xp) and the server (2k8).

Is this possible? It seems like a rather odd question but people get sensitive about their research data between departments.

Are you trying the encrypt the network as a whole or only the files/data? Also, are these clients on the same physical network or are you talking about supporting remote users as well?

not so much the files.. just the transfers. He was watching the packets with Wireshark and could view the data or something. Our concern is just on the local domain.

turn on IPSEC but it can be painful. Given that you're taking these steps, you'll also want to verify you have SSL turned on for AD replication.
