How do those of you with native 5:4 SXGA 1280x1024 LCDs play games in standard 4:3 resolutions like 1024x768, etc?

Do all monitors support scaling from 5:4 to 4:3? Or is it done by the video card?

You can play the game with borders around it... or the monitor or the video card can scale the image... or you can play the game in native resolution when the games allow 1280x1024.
