I'm attempting to build my first computer and I've noticed that most video cards I've come across use DVI-I and most of the LCD monitors I'm looking at (WS 1680x1050) use DVI-D. Whats the deal with this?

DVI-I is the combination of DVI-D (digital) and DVI-A (analog) into one plug. So DVI-I means it does both.
