Boot to IDE or SATA?

I'm putting together a new computer with a ASUS P4P800-E Deluxe motherboard. I have three IDE disks of 120GB, 160GB, and 250GB (all 7200rpm, 8MB buffer), but am open to buying a SATA disk if it would make a better boot disk. Should I go that route, or am I just fine running the three IDE disks? In case it makes any difference, the computer will be used primarily for heavy solid modeling (high OpenGL graphics) and video editing (high disk use).
