d00d, you haven't a clue? The reason so many companies put in 2GB is because so many BUYERS HAVEN'T A CLUE! Seriously, it's because 2GB sounds twice as good as 1GB.
Now, there ARE good reasons to get 2GB of RAM, mostly just video editing. In fact, I used to run 3 instances of a video encoder at once overnight, while I slept, for a simple reason: It would take 6 hours, rather than 2 hours, to encode all 3 instances, I didn't have to get up from sleeping to change from one task to the next, it was OK for them to run 1/3 the speed since I wasn't doing anything else with the computer. And the reason I bring all that up? Each instance of the video encoding program would use around 512MB of RAM if it COULD. So having 2GB of RAM would have been very nice for encoding 3 video clips simultaniously.
So basically you have several factors involved. People who'll never use more than 80GB of hard drive space buy systems with 300GB drives for what reason? Bigger is better! They get 2GB of RAM for what reason? Bigger is better! They buy 600W power supplies for what reason? Bigger is better! Bragging rights, nothing more.
And then there are the FEW PEOPLE who do SO MUCH video editing/encoding that they actually NEED lots of drive space and can USE the extra RAM.
