Is there a way have multiple profiles for a single user that are
available depending on where you login? For example: say I have an
Windows XP client. When the user_A logs in there he/she might get
profile A. If user_A logs into a Windows 2000 Workstation computer
he/she might get profile B. And all this would still be available via
roaming profiles from the 2003 Server.

Whenever you make a new account in Windows XP all the settings and profile is
stored for each of those seperate accounts.
Just make those the limited accounts so that the clients cannot change the
computer's administrative settings. You may join all the client computers to
domain account and make password protected profiles there.
