I am looking to buy a Nook Tablet, one comes with 512MB ram the other 1GB ram for $50 more. What is the difference?

You will be able to run memory intensive apps faster and I'd say you would have a smoother overall experience.

It would be worth the few dollar difference,the speed difference will be double compared to the 512..

The speed difference is not double just because the amount of memory is double though. According to CNET's review of the 8GB Nook Tablet (which has the 512mb instead of 1GB of RAM), you can only notice a difference in speed with multiple apps open and even then it is "a second or a fraction of a second" speed difference.
