Simple...

Select the mail client you want
download it
install it
Make sure it is recognised as default mail client

do you already have more than one email client installed? If so,
you can click on "Start" then you'll see "Default Programs" and select that.
There, you will be able to select the default program to use for Email.

If you do not have one installed already in that list that I showed you, then I would also suggest Windows Live Essentials with includes Windows Live Mail.
